Call it smoked belly or slab bacon, but it was a little hunk of “Hog Heaven” that my pals @buyranchdirect gave me to play with. I think it was cured and cold smoked ? I’ll ask, but it was SO good, I wonder if they have a big slab ?!... it would be amazing for a pile of Pork Belly Burnt Ends !
This picture doesn't do justice to the size of this medium-sized buta-don from Buta Daigaku (豚大学) in Tokyo's Shimbashi area - it's a massive heaped bowl of Japanese rice topped with generous slices of marinated grilled pork (there's even a larger version that isn't for the faint of heart). Buta Daigaku can be roughly translated into "School of Pork"; we think it also refers to portion sizes big enough to feed starving university boys. Still we recommend ordering some accompaniments - onsen egg, fried garlic, and kimuchi, just to help break up the monotony of (delicious porky) flavour. All these for less than 12 Singapore dollars too!
