Enjoying all the colorful veggies in this salad bowl for dinner tonight. Excited to finish eating this while watching Black Mirror, (I have a love hate relationship with this show, because it freaks me out lol, but I mostly love it ☺️) and then relax before bed by lighting a new candle (I’m SO excited. Anyone else get excited to light a new candle?) and cozying up to a good book.

Salad deets: queen avocado front and center with purple sweet potatoes, sautéed mushrooms, shredded carrots, tomatoes, @hilaryeatswell world’s best veggie burger (all-time fave), and cilantro to top it all off! Adding herbs is definitely one of my favorite new things to add to my salad. It makes such a difference and completely transforms any salad!
🔥Spicy buffalo chicken wraps with ranch dressing are bursting with flavor and made in just 5 minutes! 🌯🌯
2 cup cooked chicken, shredded or chopped (rotisserie, shredded, or grilled)
½ cup buffalo sauce (or ⅓ cup hot sauce + 2 tablespoons melted butter)
1 cup shredded lettuce
¼ cup ranch or blue cheese dressing
4 medium flour tortillas
Optional fillings: tomato, onion, shredded cheese
In a large bowl, combine the cooked chicken and buffalo sauce until the chicken is fully coated with the sauce.
Lay out the flour tortillas and divide the chicken evenly among the tortillas. Top the chicken with lettuce, and ranch dressing. Fold in the sides of the tortilla and roll the wrap burrito-style. Enjoy warm or cold!

Recipe for Two People (Half for 1)
120g Cashews (Soaked in a bowl with Hot boiling water for however long you can - I soaked them for an hour but the longer the better) Once soaked, add in a blender with
4 TBSP Nutritional Yeast (Amazing Cheesy Flavour, High in Protein and packed with B12)
Half a Lemon Squeezed
1 Shallot (cut up into small pieces and placed raw into blender)
1 tsp Garlic Salt
1/2 tsp Tumeric
1 tsp Paprika
Salt & Pepper to taste
I had dairy free Vio-Life Cheese around so I added a slice of that into the blender too which made it yummy but it really is not necessary - the cashews and Nutritional Yeast make it in general)
And finally a cup of Hot water into the blender and blend - Side note, I used the water of the pasta that I boiled as it has a creamy consistency since I used a mix of Green Pea and Red Lentil Pasta (200g of each so 400g in total - as mentioned, the recipe is for two people so half it all if it's for one :) I cooked up 2 shallots, Mushrooms and spinach on the hob (no need for oil!!! Use water, the mushrooms also let out so much water, oil is unnecessary) and optional but I added a splash of red wine to that as I had some - All this is extra stuff :) Simply add in the cooked pasta into the pan and pour the sauce on and mix it up!! Add some more salt and pepper to taste😊

Wash or boil your vegetables in your Vebo, or use it for steaming thanks to its raised floor. When your veggies are cooked simply pull your Vebo out of the pot (don’t worry, Vebo is made of silicone so it doesn’t get hot) and pop it on your sink to strain. Too easy! 🥦🌽🥕

I’m sure no one is surprised that this is my breakfast again haha! 🤩
But honestly when I find something that I love and that fuels me as well as this does I’ll have it until I’m sick of it!.. (If you’ve followed for a while you will remember the Greek yoghurt phase...😂)
So this morning’s combo was:
~ 80g oats
~ almond milk
~ scoop of chocolate protein
~ half a tbsp of cacao powder
~ 1 banana (3/4 cooked inside, 1/4 on top)
~ square of no added sugar dark choc
~ a tbsp of PB melted & drizzled over the top 🥜
If you’re someone who doesn’t like proats/oats (I literally used to HATE proats.. legit literally until last week lol) give this combo a go! Its guuuuuurd ✌🏼🤓✌🏼
