Baked oatmeal has been one of my all time favorite breakfasts for years now 😍 back when I was running long distance, this is what I ate before those long runs! I will always love oats 🙌🏼 I gave my classic baked oats a pecan pie flavored twist by adding maple syrup and pecans, and I also added @nutiva Organic MCT Oil for a boost of clean energy. I’m very picky about the superfoods and trendy items I consume, but I honestly really love this stuff. MCT Oil is really beneficial for both your brain and heart health! 🙌🏼
For the oats:
1/2c almond milk
1t baking powder
1T @nutiva Organic MCT Oil
2T maple syrup
2T-1/4c pecans (basically as many as you want! 😉)
Preheat oven to 350. Combine ingredients in a bowl, then transfer to a cast iron pan, baking dish or ramekin lined with coconut oil. Bake for 25-30 minutes, varies based on your oven!

My good friend @theevergreendiaries challenged me to look back through my feed to about a year and a half ago for some inspiration, and I sure found it.
I posted a lot of things like this — simple, daily meals. I actually vividly remember eating this sammie after going for a run 😂 I still post simple things, but the instagram game has certainly changed. These days I feel weird if my photo isn’t on a white or marble background, or if I don’t have a super inspiring caption to go with a photo of myself. I started this account for fun and as a way to hold myself accountable with my healthy eating and fitness goals; it’s still so much fun, but it’s become unnecessarily competitive 🙄 the constant scrolling can also really do a number on a girl’s self confidence, and whether or not we want to admit it, IG can also really perpetuate the cycle of disordered eating.
Moving forward, I don’t want my account to be so damn curated. I want to use it again to help me work on my eating because I’ve not only not been perfect, I’ve also been struggling. I want to post photos of myself more often (@kalejunkie says I need to 😂) maybe even a “check-in selfie” from the old @toneitup days! I want to feel more comfortable talking to the camera on stories. And I guess I just don’t want it to be so dang serious and cutthroat among folks on here anymore 🤦🏻♀️ .
This account has never been about the number of friends by my name. I hate the word followers; you guys are like family to me. I love this community, and I am grateful for it every single day. Early bird dinner 🐧 on a rare early day off from work! I set off the fire alarm grilling my salmon but it was totally worth it because it turned out perfectly 😍 what’s your favorite way to cook salmon?? Back on my meal prep game! And it feels so good 🙌🏼 roasted lots of veggies and chicken, and experimented with spaghetti squash in the instant pot!
