Today I Drove by a little street taco stand BANGIN out some dollar tacos! Long line!
🚗Saw a little beat up car parked next to a construction site. Little Spanish lady pops the trunk and has big "Hot Pots" in the back and begins serving the men lining up for their $5 lunch special. Next day, she's back- and so are her customers HUNGRY and ready to pay.

My point is, people are out here making 🍋 Lemonade with the lemons of life! I love it! It inspired me to not fear HARD work. To not shy from creativity and new ideas. To not hesitate and ask, "Why not me?!" When it appears there is no way... get out there and freakin MAKE A WAY! Do what others aren't willing to do, go hustle, use your $10 to make $20.. Then go use that $20 to make $40! Anyone can DO BETTER.. and gradually go from "a little better" to THRIVING! If you're willing- THERE'S A WAY!

I finally made the infamous ricotta bake but added some ground beef to them since I'm on the soft foods phase. So it's pretty much lasagna minus the noodles. It made 8 of these cute minis and then I cooked up some pasta for the boys to have with theirs. I can't wait to try them out tomorrow!!! Each bowl comes to 554 calories and 48g of protein. I imagine I will only be able to eat 1/3-1/2 of one at a time. Each dish contains 1/4C each of the ricotta parm egg mixture, ground beef, & marinara and then topped with 2T shredded cheese. I'm curious if it's gonna be too much ricotta but we shall see. It looks delish!!!
