Hey guys it's @georgiasfitlife here again! Today I have a super quick weeknight curry for you! It's super delicious and if you make the sauce it keeps in the fridge for a few days and can be used with either chicken or prawns!
🍽Recipe (serves 4):
1 onion diced
3 cloves garlic crushed
2tbsp curry powder (feel free to add more or less depending on how spicy you like your curry)
2tbsp tomato paste
1 can chopped tomatoes
100-200ml stock (chicken or veggie both work)
400g chicken or prawns
100g Greek yogurt or Quark
1⃣Fry off the onion and garlic with the curry powder until translucent, add in the tomato paste and cook for another minute or 2.
2⃣Add the cooked onion/garlic mix to a blender with the can of chopped tomatoes and a small amount of stock and blend it up.
3⃣ If using chicken, cook that off, adding a little more curry powder for flavour. Once browned add back the sauce and simmer for 15 mins. If you're using prawns add the prawns to the sauce for about 5 mins before the end to prevent them overcooking.
4⃣ Add some veggies if you wish, some spinach works great, add right before the end and wilt it down.
5⃣ Right before serving add in the Greek yogurt or quark. If freezing or keeeping extra for another day don't add the Greek yogurt/quark to that portion!
6⃣ Serve with some rice or naan bread 😁 #tasteofeire
